We call this the “day before grocery shopping” recipe… You know, after you depleted just about all the food in the frig, and made all the recipes you could think of for the week… now you’re left with throwing something together, with a little prayer that whatever you make will taste good. Lol

Well this was it, and YES it tasted amazing, even our picky little eaters loved it! I seasoned the chicken with our new Zesty Garlic Mojo, and the flavor is bright and zesty, with subtle sweet undertones, and it pairs well with any side!

Prep time: 10 mins    Cook time: 40 mins

Main Ingredients

  • 8 chicken drums, cleaned

  • 2 tbsp MAHMI Zesty Garlic Mojo

  • 1/2 sweet yellow onion, sliced

  • 1/2 green bell pepper, sliced

  • 5 garlic cloves, minced

  • 2 tbsp butter

  • 3 tbsp olive oil

Recipe Steps

  1. Preheat oven to 350*.

  2. Pat clean chicken drums dry with paper towel, and in a large mixing bowl add chicken drums, 2 tbsp olive oil, and 2 tbsp MAHMI Zesty Garlic Mojo. Massage ingredients into the chicken.

  3. Using an oven safe skillet (I used my cast iron skillet), on the stovetop on medium heat, add butter and 1 tbsp olive oil. Once the oil is hot add in onions, bell peppers, and garlic; sauté for 2 minutes until slightly translucent.

  4. Next add in chicken drums and cook for 5 minutes until golden, and flip and cook for another 2 minutes. Meanwhile be sure to move the veggies around the chicken for even cooking.

  5. Sprinkle on about 1 tsp of MAHMI Zesty Garlic Mojo on the top layer of the chicken drums, then bake in oven for 30 minutes.

  6. Remove skillet from oven, and turn oven to broil. While the oven is getting hot, take the veggies and the chicken juice/oil and spread it across the chicken drums.

  7. Place skillet back in oven and broil for 3-5 minutes or until brown and crispy.

  8. Serve hot and enjoy!
